Brunch Enchilada Casserole

INGREDIENTS
- 1 lb sausage, browned and cooled
- 1/4 cup green onions, chopped
- 1/4 cup celeryor green peppers, chopped
- 2 cups grated cheese
- 8 8-inch flour tortillas
- 4 eggs
- 2 cups milk
- 1 tablespoon flour
- 1/2 teaspoon garlic powder
- 2 cups grated cheese
- chopped green onions, to garnish
- tomatoes, to garnish
DIRECTIONS
- mix sausage, green onion celery or green pepper.
- mix eggs milk flour and garlic powder.
- place 1/2 cup meat mixture in middle of tortilla.
- roll and place in 9 x 13 inch pan seam side down.
- pour egg mixture over rolls.
- cover and refrigerate overnight.
- bake coverd 45 to 50 minutes or until set.
- sprinkle with cheese bake 5 more minutes.
- let stand 10 minutes before serving.
- garnish with green onion and chopped tomatoes.
- serve with enchilada sauce if desired.
