INGREDIENTS
- 3 large eggs, lightly beaten
- 1/4 cup water
- 1 cup raisins
- 1 teaspoon vanilla extract
- 1 cup Crisco shortening
- 1 teaspoon ground cinnamon
- 2 1/2 cups flour
- 1 teaspoon salt
- 2 teaspoons baking soda
- 2 cups quick-cooking oatmeal(not instant)
- 1/2 cup chopped walnuts
- 1 cup firmly packed brown sugar
- 1 cup granulated sugar
DIRECTIONS
- Preheat oven to 350°.
- Whisk eggs in a small bowl, add 1/4 cup water, 1 tsp vanilla and raisins; mix well.
- VERY IMPORTANT let set on counter for at least 1 hour– In another bowl, combine crisco, and sugars, mix well.
- Preheat oven to 350°.
- Gradually add dry ingredients.
- Blend in raisin mixture — mix well.
- I use a cookie scoop, slightly less than 1/4 cup and place them on a greased cookie sheet. I slightly flatten them with the back of the scoop.
- Bake at 350° for 10-12 minutes. Do not flatten cookies a lot — just a gentle tap.other wise they will flatten out too much.
- Baking note: please remember to reverse position of cookie sheets halfway through baking.
- DO NOT OVER BAKE.
- Cookies should be slightly golden brown around edges.
- Centers will look set– let cool 1 minute on cookie sheet and then remove to wire rack to complete cool.
- I have used this recipe for over 30 years– always outstanding– most important thing to remove cookies from oven before they are finished– residual heat in cookies will complete cooking– and result in a cookie that is not dried out.
- I also add more walnuts, as I like lots of big nuts in my oatmeal cookies– I have often left the egg, raisin mixture on counter, for a couple of hours while cleaning house and came back and baked marvelous cookies.

INGREDIENTS
- 2 eggs
- 1 (16ounce)jar applesauce
- 2 cups raisins
- 1/2 cupall-bran cereal
- 2 1/2 cups flour
- 2 1/2 teaspoons baking powder
- 1 teaspoon salt
- 1/2 teaspoon baking soda
- 1 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- 1/4 cupvegetable oil
- 1 cup brown sugar, firmly packed
DIRECTIONS
- Preheat oven to 350 degrees.
- Grease 9×5x3-inch loaf pan.
- In small bowl, combine eggs, applesauce, raisins, and bran cereal; let stand about 10 mins and stir.
- In large bowl, stir together flour, baking powder, salt, baking soda, cinnamon and nutmeg.
- Stir vegetable oil and brown sugar into raisin/applesauce mixture.
- Add raisin/applesauce mixture to dry ingredients, stir until moistened completely and turn into loaf pan.
- Bake 60-70 minutes or until toothpick inserted into center comes out clean.
- Let cool 15 minutes before removing from pan.

INGREDIENTS
- 4 cloves garlic, peeled
- 1 cup kalamata olives, pitted
- 1/2 cup raisins
- 2 tablespoons fresh oregano
- 1 lemon, juice of
- 2 tablespoons olive oil
- salt
- pepper
DIRECTIONS
- Place garlic, olives& raisins into the bowl of a food processor- process until chopped Add orgegano, lemon juice& olive oil and process again to form a corase paste.
- Seaon with salt& pepper to taste (Just remember that olives are already salty).

INGREDIENTS
- 1/2 cup whole wheat flour
- 1/4 cup all-purpose flour
- 2 tablespoons all-purpose flour
- 2 tablespoons Splenda sugar substituteor Equal Spoonful
- 1/4 teaspoon salt
- 1 tablespoon baking powder
- 1/4 teaspoon cinnamon
- 1 1/2 cups unprocessed natural bran
- 1 1/2 cups quick-cooking oatmeal
- 3/4 cup low-fat buttermilk
- 1 tablespoon low-fat buttermilk
- 1/4 cupapple juice concentrate
- 2 tablespoonsvegetable oil
- 2 egg whites
- 1 tablespoon honey
- 1/2 cup golden raisinsor currantsor regular regular raisins
- 1/2 cup hot water
DIRECTIONS
- Preheat oven to 400°F.
- Sift flours, Splenda/Equal, baking powder, cinnamon and salt together mixing well; add in the bran and oatmeal.
- In a second bowl, use a mixer to blend the buttermilk, apple juice concentrate, egg whites, honey about 2 minutes.
- Pour dry ingredients into wet stirring until just moist; gently mix in golden raisins and hot (not boiling) water.
- Spoon batter into muffin tins with cups or lightly sprayed with cooking spray.
- Bake 20 minutes until just browned and firm.

INGREDIENTS
- 3/4 cup butter
- 1 cup packed brown sugar
- 1/2 cup sugar
- 1/4 cup skim milk
- 1 egg
- 1 teaspoon vanilla
- 1 cup whole wheat flour
- 1/2 teaspoon baking soda
- 1 teaspoon cinnamon
- 1/4 teaspoon salt
- 3 cups old fashioned oats
- 1 cup raisins
- dried apricots
- assorted dried fruits
- 1 (6ounce)container yogurt(your choice on the flavor) or white chocolate chips, melted
DIRECTIONS
- Preheat oven to 325.
- Spray 2 pizza pans, pie pans, or cookie sheets with cooking spray.
- Beat butter, sugars, milk, egg, and vanilla until smooth.
- In another bowl, stir together flour, cinnamon, baking soda, and salt.
- Gradually add to butter mixture and mix well.
- Stir in oatmeal and raisins.
- Divide dough in half and spread into desired dishes.
- Pat dough into 9-inch”pizzas”.
- Bake 30-40 minutes, or until firm to touch.
- Once cooled, top with yogurt or white chocolate and decorate with dried fruit.
