INGREDIENTS

  • 1 3/4 cups flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 cup soft butter
  • 1/2 cup brown sugar
  • 1/4 cup white sugar
  • 1/2 teaspoon vanilla
  • 1 1/2 cups quick oats(cooks in 1 minute)

DIRECTIONS

  1. Sift flour with baking powder and salt.
  2. Cream butter and gradually add sugars, vanilla and oats.
  3. Add sifted mixture to make a stiff dough.
  4. Turn onto floured board and knead dough lightly to blend thoroughly.
  5. Pat or roll into 9″X 12″ rectangle and cut into 1 1/2″ squares.
  6. Bake at 350° for about 20-25 minutes until golden.

Cranberry Orange Oats

INGREDIENTS

  • 1 cup water
  • 1/2 cupunsweetened orange juice
  • 1/3 cup rolled oats
  • 1/3 cup natural oat bran
  • 1/2-1 teaspoon ground cinnamon
  • 1/8 teaspoon cardamom
  • 1/2 cup dried cranberries
  • maple syrup (optional)
  • honey (optional)
  • brown sugar (optional)

DIRECTIONS

  1. Place water and juice in a small saucepan and bring to a boil over medium heat.
  2. Combine the oats, bran, spices and cranberries.
  3. Add to juice mixture, stirring briskly with fork or wire whisk to prevent lumps from forming.
  4. Cook until desired consistency, approximately 5 minutes.
  5. Serve topped with your favorite sweetener.

Soda Bread With Oats

INGREDIENTS

  • 3 1/2 cups all-purpose flour
  • 1 1/2 teaspoons baking soda
  • 1/2 teaspoon salt
  • 1 tablespoon baking powder, plus
  • 1 teaspoon baking powder
  • 1/3 cup sugar
  • 1 cupoat bran
  • 1 1/2 cups rolled oats
  • 1 1/4 cups skim milk, plus
  • 1 1/4 tablespoons lemon juiceor buttermilk
  • 1/4 cup melted margarine
  • 2 eggs, slightly beaten (or 4 tablespoons water + 4 tsp baking powder)

DIRECTIONS

  1. Preheat oven to 350* F.
  2. Sift (or mix with electric mixer) flour, soda, salt, powder, sugar, bran in large bowl.
  3. In separate bowl, mix milk, lemon juice, melted marjarine, and eggs or egg substitute.
  4. Form well in the dry ingredients and add wet ingredients.
  5. Mix until dough begins to form.
  6. Kneed into ball either in bowl or on very lightly floured surface.
  7. Place dough either in greased bread pan or on greased baking sheet.
  8. Bake for 45- 60 minutes or until knife test comes out clean.
