Microwave Sweet Nuts

INGREDIENTS

  • 3 cups walnutsor almondsor pecans(or a combination, your choice)
  • 1/3 cup sugar
  • 2 tablespoons water
  • 2 tablespoons roasted sesame seeds
  • 1/4 teaspoon cinnamon

DIRECTIONS

  1. Combine nuts, water and sugar in a microwave safe dish.
  2. Microwave uncovered 3 minutes on high.
  3. Stir to coat all the nuts.
  4. Let cool slightly (+/-3minutes).
  5. Sprinkle with sesame seeds and cinnamon.
  6. Stir lightly.
  7. Spread on waxed paper and let cool completely.

Bar Nuts

INGREDIENTS

  • 4 tablespoons butter
  • 1/2 teaspoon cayenne pepper
  • 2 teaspoonscajun seasoning
  • 2 teaspoons ground cumin
  • 3 tablespoons sugar
  • 1/3 lb whole pecans
  • 1/3 lb whole almonds
  • 1/3 lb whole cashews
  • 3 dried pineapple rings , cut into 1 inch pieces
  • salt
  • sugar

DIRECTIONS

  1. In a large skillet over medium high heat, melt the butter.
  2. Add the cayenne, Cajun seasoniing, cumin, and sugar and stir until the butter begins to foam.
  3. Immediately add the nuts, stirring or tossing constantly for about 3 minutes, or until the nuts are well toasted and lightly coloured.
  4. Pour the nuts onto a wire rack, placed over a baking sheet.
  5. Let cool to room temperature.
  6. Transfer the nuts to a mixing bowl and toss them with the dried pineapple.
  7. Season to taste with salt and sugar.
  8. Store in an airtight container until ready to serve.

Banana Crunch Muffins (w/grape Nuts)

INGREDIENTS

  • 1 1/2 cups flour
  • 1/2 cup sugar
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 egg
  • 2 medium ripe bananas, mashed
  • 1/2 cup plain yogurt
  • 1/2 teaspoon vanilla
  • 1 cupPost Grape-Nuts cereal

DIRECTIONS

  1. Preheat oven to 350.
  2. Mix flour, sugar, baking powder, baking soda and salt in a large bowl.
  3. Beat the egg in a small bowl; stir in bananas, yogurt and vanilla.
  4. Add to flour mixture; stirring until just moistened (batter will be lumpy; do not overmix!).
  5. Stir in cereal.
  6. Spoon batter into a 12-cup muffin tin that has been sprayed with cooking spray, filling each cup 2/3 full.
  7. Bake in preheated oven for 25 minutes or until golden brown.
  8. Serve warm.
  9. NOTE: Muffins can be frozen for up to 6 months.
  10. Just thaw at room temperature and reheat until warm.

Grape Nuts & Bran Muffins

INGREDIENTS

  • 1 1/4 cups flour
  • 1 tablespoon baking powder
  • 1 teaspoon cinnamon
  • 1/2 teaspoon salt
  • 1 cupgrape-Nuts cereal
  • 1 1/2 cups skim milk
  • 1/2 cup natural wheat bran , toasted
  • 1/2 cupbran buds or bran buds , of choice
  • 1 egg, slightly beaten
  • 1/2 cup chunky applesauce
  • 1/2 cup firmly packed brown sugar
  • 2 teaspoons melted margarine

DIRECTIONS

  1. In a large bowl, combine first four ingredients.
  2. In another bowl, pour in milk and cereal and let set 3 minutes.
  3. Stir in the egg, applesauce, sugar and margarine.
  4. Add to flour mixture and stir in the Bran and Maple Pecan Crunch cereal.
  5. Spoon batter into greased muffin cups.
  6. Bake 20 minutes at 400.

Hot Salty Nuts

INGREDIENTS

  • 3/4 lb party mix unsalted nuts (an 11.75 ounce can works well)
  • 1 egg white
  • 2 teaspoons kosher salt
  • 1 teaspoon sugar
  • 1 1/2 teaspoons red pepper flakes
  • 3/4 teaspoon cumin
  • 3/4 teaspoon oregano
  • 1/2 teaspoon cayenne pepper

DIRECTIONS

  1. Toss nuts in egg white.
  2. Combine the seasonings and sprinkle over the nuts in a greased or non-stick baking sheet.
  3. (Alternatively, you can combine the seasonings with the egg white and coat the nuts that way).
  4. Bake in a 300 degree oven for 25 minutes.
