Kree’s Sweet and “meaty” Vegetarian Chili

INGREDIENTS

  • 1 cup dry textured vegetable protein (TVP)
  • 3/4 cup lukewarm water
  • 1/2 tablespoon chili powder, to taste
  • 1 (15ounce)canred beans
  • 1 (15ounce)can black beans
  • 1 (6ounce)can tomato paste
  • 1 (14 1/2ounce)can diced tomatoes with green pepper celery and onion(Hunts)
  • 1/2 tablespoon cinnamon, to taste
  • 1 tablespoon honey, to taste
  • vegetable brothor chicken broth(for non-vegetarians(if needed)

DIRECTIONS

  1. Combine the TVP, lukewarm water, and chili powder; allow to sit for about 10 minutes to rehydrate.
  2. Rinse the beans thoroughly to cut down on the sodium content.
  3. Combine the rehydrated TVP, beans, diced tomatoes, tomato paste, cinnamon, and honey in a large pot; turn heat to medium-low and simmer for about 10-15 minutes.
  4. You may need to add some broth if it gets too thick.
  5. Taste the chili and add more honey or spices as desired.
  6. Simmer an additional 10-15 minutes, or until it’s nice and warm; the time is pretty flexible since you’re just heating everything up.
  7. This is great served over a baked potato and sprinkled with shredded cheddar soy cheese!
  8. You can also serve it on rice or toast, or however you prefer.

Black Bean Chili

  • 1/2 cup cooked black beans
  • 2 tablespoons salsa
  • 2 tablespoons chopped onions
  • 1/2 cup stewed tomatoes

DIRECTIONS

  1. combine ingredients.
  2. Warm and enjoy.

INGREDIENTS

  • 1 medium onion, chopped
  • 1 medium green pepper, chopped
  • 2 garlic cloves, minced
  • 1 teaspoon olive oil
  • 16 ounces extra firm tofu, drained and crumbled
  • 1 teaspoon cumin
  • 1 teaspoonhot sauce
  • salt, to taste
  • pepper, to taste
  • 1 (19ounce)can red kidney beans, drained
  • 1 (19ounce)can white kidney beans, drained
  • 1 (28ounce)can diced tomatoes
  • 1 (14ounce)can tomato sauce
  • 3 medium carrots, sliced
  • 2 tablespoons chili powder

DIRECTIONS

  1. Saute first 4 in meduium heat.
  2. Add tofu, cumin, hot sauce, and salt and pepper and saute until crisp and lightly browned (10 min).
  3. Add rest of ingredients (beans, tomatoes, tomato sauce, carrots, and chili powder).
  4. Boil, reduce heat and simmer 45 to 55 minutes.

Westins Chili

INGREDIENTS

  • 2 lbs hamburger
  • 2 tablespoons chili powder
  • 23 ounces tomato juice(more or less)
  • 6 ouncescarrot baby food
  • 1/2 onion
  • 1 (16ounce)can kidney beansor pinto beans

DIRECTIONS

  1. Fry hamburger and onion in skillet, drain off grease.
  2. Stir in chili powder.
  3. Blend beans, carrots and tomato juice in blender.
  4. Add together.
  5. Heat and serve.

Jiffy Chili Pie

INGREDIENTS

  • 1 (8ounce)boxJiffy cornbread mix
  • 1 egg
  • 1/3 cup milk
  • 1 (15ounce)canchili (no beans)
  • onions(chopped)(optional)
  • 1/4 cup shredded cheese

DIRECTIONS

  1. Beat egg.
  2. Add milk to egg.
  3. Add the rest of the ingredients to the milk and egg mixture.
  4. Grease 8 x 8 baking pan.
  5. Bake at 400 degrees for 20 minutes.
