INGREDIENTS
- 1 1/2 lbs prepared frozen or homemade meatballs
- 1 (16ounce)box large shell pasta
- 2 cups ricotta cheese
- 2 cups shredded mozzarella cheese
- 1/2 cup sour cream
- 1 teaspoonitalian seasoning
- 1 (28ounce)jar prepared spaghetti sauce or homemade homemade spaghetti sauce
- grated parmesan cheese, to taste
DIRECTIONS
- Preheat oven to 350.
- Boil pasta according to directions- making sure to not overcook!
- (al dente).
- If meatballs are frozen- thaw- I like to brown mine either on the stove or in the oven.
- Combine the ricotta, sour cream and italian seasoning- I add an extra dash of garlic and freshly ground pepper.
- Spray a 9×13 deep baker with pam.
- Spread a thin layer of sauce on the bottom of baking pan.
- Top this with 1/2 of the pasta shells drained.
- Top with the ricotta mixuture.
- Top with all the meatballs.
- Then layer with remaining 1/2 of shell pasta.
- Top with all the sauce.
- Top with the mozzerella and parmesan cheese (I just sprinkle a little on top).
- Bake at 350 for 30 minutes until heated through and cheese is bubbly!

INGREDIENTS
- 1 medium onion, chopped
- 2 tablespoons butteror margarine
- 2 tablespoons all-purpose flour
- 1 1/2 teaspoons salt
- 1 teaspoon worcestershire sauce
- 1/4 teaspoon pepper
- 2 1/2 cups milk
- 3 medium potatoes, cooked and cubed
- 1 (15 1/4ounce)can whole kernel corn, drained
- 1 (12ounce)can corned beef
- 1 (12ounce)packagerefrigerated buttermilk biscuits
DIRECTIONS
- Melt butter in a large saucepan, and cook onion at medium heat until tender; remove from heat.
- Stir in flour, salt, Worcestershire sauce and pepper.
- Gradually add the milk, stirring well.
- Bring to a boil, and stir for two minutes, or until thickened and bubbly.
- Mix in the potatoes, corn and corned beef.
- Transfer to a greased 13″ x 9″ x 2″ casserole dish.
- Bake, uncovered, at 400F for 25-30 minutes, or until bubbly.
- Top with the biscuits, and bake for an additional 10-15 minutes, or until biscuits are golden brown.

INGREDIENTS
- 1 large cauliflower
- 2 tablespoons butter
- 1/3 cup flour
- 4 cups hot milk
- 1 1/2 cups shredded cheddar cheese
- 1/2 teaspoon dry mustard
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 1/4 cupfresh breadcrumbs
- 1/4 cup grated parmesan cheese
- 2 tablespoons chopped fresh parsley
DIRECTIONS
- Separate cauliflower into small florets and steam over boiling water for about 10 minutes.
- Place cauliflower in an 8" square baking dish.
- Melt butter over medium heat in a saucepan, then stir in flour for about 1 minute.
- Gradually whisk in milk and simmer, whisking until thick for about 8 minutes.
- Add cheddar cheese, dry mustard, salt and pepper until cheese is melted.
- Pour cheese sauce over cauliflower.
- In a small bowl, mix together bread crumbs, Parmesan and parsley and sprinkle over cauliflower mixture.
- Bake at 400° until bubbly and golden, about 15 minutes.

INGREDIENTS
- 1 (15ounce)can green peas
- 1 (5ounce)can water chestnuts, drained and chopped
- 1 (10ounce)cancream of mushroom soup
- 1 (2ounce)jar pimientos, drained
- 2-3 cupsRitz crackers , crushed
- 1/2 cup butter
- 1 cup cheddar cheese, shredded
DIRECTIONS
- Preheat oven to 350′.
- In a medium bowl combine peas,chestnuts,pimentos,cream of mushroom soup and cheddar cheese.
- Grease a 8×8 baking dish and add the pea mixture.
- Melt butter in microwave dish.
- Add Ritz crackers to butter and sprinkle over top of the casserole.
- Bake for 30 minutes.

INGREDIENTS
- 3 tablespoonssalad oil
- 1 1/2 lbs lean ground beef
- 1 cup chopped onions
- 4 cupsmeatless sauce
- 1 teaspoon salt
- 1/4 teaspoon pepper
- 1/2 teaspoon garlic powder
- 1 teaspoon basil
- 1 teaspoon oregano
- 6 medium potatoes, peeled and sliced thin
- 8 ounces mozzarella cheese, grated
DIRECTIONS
- Heat oil in large skillet.
- Add meat and onions and cook until onions are lightly browned.
- Add spaghetti sauce and seasonings.
- Cook 5 mins.
- ,stirring to prevent sticking.
- Spoon 1/3 of the meat mixture into a 13×9x2" baking dish.
- Cover with 1/2 the potatoes.
- Repeat layers, ending with the meat.
- Cover tightly.
- Bake in a preheated oven at 375 degrees for about one hour or until potatoes are done.
- Remove cover.
- Sprinkle with cheese and bake until cheese is melted.
- Let stand 10 minutes and serve.
