Baked Shells and Meatball Casserole

INGREDIENTS

  • 1 1/2 lbs prepared frozen or homemade meatballs
  • 1 (16ounce)box large shell pasta
  • 2 cups ricotta cheese
  • 2 cups shredded mozzarella cheese
  • 1/2 cup sour cream
  • 1 teaspoonitalian seasoning
  • 1 (28ounce)jar prepared spaghetti sauce or homemade homemade spaghetti sauce
  • grated parmesan cheese, to taste

DIRECTIONS

  1. Preheat oven to 350.
  2. Boil pasta according to directions- making sure to not overcook!
  3. (al dente).
  4. If meatballs are frozen- thaw- I like to brown mine either on the stove or in the oven.
  5. Combine the ricotta, sour cream and italian seasoning- I add an extra dash of garlic and freshly ground pepper.
  6. Spray a 9×13 deep baker with pam.
  7. Spread a thin layer of sauce on the bottom of baking pan.
  8. Top this with 1/2 of the pasta shells drained.
  9. Top with the ricotta mixuture.
  10. Top with all the meatballs.
  11. Then layer with remaining 1/2 of shell pasta.
  12. Top with all the sauce.
  13. Top with the mozzerella and parmesan cheese (I just sprinkle a little on top).
  14. Bake at 350 for 30 minutes until heated through and cheese is bubbly!

Corned Beef Casserole

INGREDIENTS

  • 1 medium onion, chopped
  • 2 tablespoons butteror margarine
  • 2 tablespoons all-purpose flour
  • 1 1/2 teaspoons salt
  • 1 teaspoon worcestershire sauce
  • 1/4 teaspoon pepper
  • 2 1/2 cups milk
  • 3 medium potatoes, cooked and cubed
  • 1 (15 1/4ounce)can whole kernel corn, drained
  • 1 (12ounce)can corned beef
  • 1 (12ounce)packagerefrigerated buttermilk biscuits

DIRECTIONS

  1. Melt butter in a large saucepan, and cook onion at medium heat until tender; remove from heat.
  2. Stir in flour, salt, Worcestershire sauce and pepper.
  3. Gradually add the milk, stirring well.
  4. Bring to a boil, and stir for two minutes, or until thickened and bubbly.
  5. Mix in the potatoes, corn and corned beef.
  6. Transfer to a greased 13″ x 9″ x 2″ casserole dish.
  7. Bake, uncovered, at 400F for 25-30 minutes, or until bubbly.
  8. Top with the biscuits, and bake for an additional 10-15 minutes, or until biscuits are golden brown.

Cauliflower Delight Casserole

INGREDIENTS

  • 1 large cauliflower
  • 2 tablespoons butter
  • 1/3 cup flour
  • 4 cups hot milk
  • 1 1/2 cups shredded cheddar cheese
  • 1/2 teaspoon dry mustard
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 cupfresh breadcrumbs
  • 1/4 cup grated parmesan cheese
  • 2 tablespoons chopped fresh parsley

DIRECTIONS

  1. Separate cauliflower into small florets and steam over boiling water for about 10 minutes.
  2. Place cauliflower in an 8" square baking dish.
  3. Melt butter over medium heat in a saucepan, then stir in flour for about 1 minute.
  4. Gradually whisk in milk and simmer, whisking until thick for about 8 minutes.
  5. Add cheddar cheese, dry mustard, salt and pepper until cheese is melted.
  6. Pour cheese sauce over cauliflower.
  7. In a small bowl, mix together bread crumbs, Parmesan and parsley and sprinkle over cauliflower mixture.
  8. Bake at 400° until bubbly and golden, about 15 minutes.

Green Pea Casserole

INGREDIENTS

  • 1 (15ounce)can green peas
  • 1 (5ounce)can water chestnuts, drained and chopped
  • 1 (10ounce)cancream of mushroom soup
  • 1 (2ounce)jar pimientos, drained
  • 2-3 cupsRitz crackers , crushed
  • 1/2 cup butter
  • 1 cup cheddar cheese, shredded

DIRECTIONS

  1. Preheat oven to 350′.
  2. In a medium bowl combine peas,chestnuts,pimentos,cream of mushroom soup and cheddar cheese.
  3. Grease a 8×8 baking dish and add the pea mixture.
  4. Melt butter in microwave dish.
  5. Add Ritz crackers to butter and sprinkle over top of the casserole.
  6. Bake for 30 minutes.

Italian Casserole

INGREDIENTS

  • 3 tablespoonssalad oil
  • 1 1/2 lbs lean ground beef
  • 1 cup chopped onions
  • 4 cupsmeatless sauce
  • 1 teaspoon salt
  • 1/4 teaspoon pepper
  • 1/2 teaspoon garlic powder
  • 1 teaspoon basil
  • 1 teaspoon oregano
  • 6 medium potatoes, peeled and sliced thin
  • 8 ounces mozzarella cheese, grated

DIRECTIONS

  1. Heat oil in large skillet.
  2. Add meat and onions and cook until onions are lightly browned.
  3. Add spaghetti sauce and seasonings.
  4. Cook 5 mins.
  5. ,stirring to prevent sticking.
  6. Spoon 1/3 of the meat mixture into a 13×9x2" baking dish.
  7. Cover with 1/2 the potatoes.
  8. Repeat layers, ending with the meat.
  9. Cover tightly.
  10. Bake in a preheated oven at 375 degrees for about one hour or until potatoes are done.
  11. Remove cover.
  12. Sprinkle with cheese and bake until cheese is melted.
  13. Let stand 10 minutes and serve.
