INGREDIENTS

  • 3/4 cup plain fat-free yogurt, refrigerated
  • 3/4 cup applesauce, refrigerated
  • 3/4 cup pineapple chunks in juice, refrigerated
  • 1 banana
  • 1 tablespoon blackstrap molasses
  • 1 egg
  • 1 cup frozen strawberriesor frozen blueberries(etc.)
  • 2 tablespoons flax seed oil

DIRECTIONS

  1. Place all ingredients in blender and blend until smooth; if you want thicker add crushed ice until desired consistency.
  2. pour into 2 tall glasses and serve.
  3. Enjoy your day.

Canadian Breakfast Latke

INGREDIENTS

DIRECTIONS

  1. Into a microwaveable small bowl or dish:.
  2. Chop onion and mushroom into small pieces.
  3. Grate zucchini and potatoe.
  4. Add flour and egg, salt and pepper.
  5. Mix all ingredients well together.
  6. To cut down cooking time place container in microwave on medium high for two minutes.
  7. Remove contents to frypan, flatten and cook each side (until crisp) about 3-4 minutes.
  8. Fry eggs.
  9. Toast bread and transfer latke to bread and top with eggs.
  10. Enjoy.
  11. Please add to ingtedients: 1 small potatoe

Hearty Breakfast Casserole

INGREDIENTS

  • 1 (20ounce)package frozen hash browns, thawed
  • 1/2 cup cheddar cheese
  • 1/4 cupvegetable oil
  • 1 1/2 tablespoons chopped parsley
  • 3/4 cup monterey jack pepper cheese
  • 3/4 cup swiss cheese
  • 1 (12ounce)package sausage, cooked and drained
  • 1 (4ounce)cansliced mushrooms , drained
  • 1/2 cup milk
  • 6 eggs, beaten
  • 1 teaspoongarlic salt
  • 1/4 teaspoon pepper
  • 6-8 slices tomatoes(thin slices)

DIRECTIONS

  1. Preheat oven to 450 degrees.
  2. In a medium bowl, combine the potatoes, cheddar cheese and oil.
  3. Mix well.
  4. Press mixture into a 9X13 dish.
  5. Bake for 30 minutes until golden brown; remove from oven.
  6. Reduce heat to 350 degrees.
  7. In a large bowl, combine 1 tbsp parsley with the remaining ingredients except the tomato slices; mix well.
  8. Pour over potato crust.
  9. Bake for 25 minutes or until the eggs are set.
  10. Place the tomato slices over the casserole and top with remaining parsley.
  11. Bake 5 to 7 minutes longer.

South Beach Diet Breakfast Crepes With Ricotta Cocoa Filling

INGREDIENTS

    Filling mix
  • 1/4 cup part-skim ricotta cheese
  • 1 dash ground cinnamon
  • 1 g sugar substitute
  • 1/8-1/4 teaspoon cocoa powder
  • Crepe Mix

  • 2 eggs
  • 2 tablespoons part-skim ricotta cheese
  • 1/2 teaspoon ground cinnamonor
  • 1 dash nutmeg
  • 1 1/2 teaspoons vanilla extract
  • 1 (1g)packet sugar substitute

DIRECTIONS

  1. For the crepe mix, beat the eggs in a small mixing bowl and add the remaining ingredients and beat until well blended.
  2. Spray a small skillet, crepe or omelette pan with non stick cooking spray.
  3. Pour the crepe mixture into skillet/pan and cook on medium heat until almost cooked through.
  4. Meanwhile, combine together the crepe filling ingredients.
  5. Flip crepe and cook just a bit more; put filling mixture in a line down the middle and roll crepe over top and cook until done.
  6. *You can also flip this like a pancake and top it with the ricotta filling, rather than rolling it over.
  7. *Top with sprinkled ground cinnamon, sugar free syrup or a squirt of Redi Whip, optional.

Fresh Fruit Breakfast Parfaits

INGREDIENTS

  • 1 banana, sliced
  • 6 strawberries, sliced
  • 2 teaspoons light brown sugar
  • 4 ounces vanilla yogurt(regular,low-fat or non-fat- ok)

DIRECTIONS

  1. Place ½ of the bananas and ½ of the strawberries in each of 2 parfait glasses.
  2. Sprinkle 1 teaspoon of brown sugar over each.
  3. Top with each with ½ of the yogurt and serve.
