INGREDIENTS
- 1 cup chopped onions
- 2 cloves crushed garlic
- 3 tablespoons yellow mustard seeds, toasted
- 1 teaspoon black peppercorns
- 1/2 teaspoon red pepper flakes
- 1 inch cinnamon sticks
- 1 teaspoon cloves
- 2 cups dark vinegar
- 1/2 teaspoon cardamom seeds
- 1/2 teaspoon curry powder
- 1-2crushed anchovy
- 2 cups malt vinegar
- 1/2 cup water
- 1/2 cup molasses
- 1/2 cup soy sauce
DIRECTIONS
- place garlic,mustard seeds,Red pepper,cinnamon sticks,cloves,cardomom in cheesecloth.
- Bring to a boil the spice bag with the vinegar,water,molasses.
- Then simmer 45 minute.
- Mix salt,anchovy,curry with the water and add to the sauce.
- Refidgerate for 2 weeks,in a glass or stainless steel bowl,stiring and sqeesing the bag daily.
- Strain and bottle.
