Poorchaster Sauce

INGREDIENTS

  • 1 cup chopped onions
  • 2 cloves crushed garlic
  • 3 tablespoons yellow mustard seeds, toasted
  • 1 teaspoon black peppercorns
  • 1/2 teaspoon red pepper flakes
  • 1 inch cinnamon sticks
  • 1 teaspoon cloves
  • 2 cups dark vinegar
  • 1/2 teaspoon cardamom seeds
  • 1/2 teaspoon curry powder
  • 1-2crushed anchovy
  • 2 cups malt vinegar
  • 1/2 cup water
  • 1/2 cup molasses
  • 1/2 cup soy sauce

DIRECTIONS

  1. place garlic,mustard seeds,Red pepper,cinnamon sticks,cloves,cardomom in cheesecloth.
  2. Bring to a boil the spice bag with the vinegar,water,molasses.
  3. Then simmer 45 minute.
  4. Mix salt,anchovy,curry with the water and add to the sauce.
  5. Refidgerate for 2 weeks,in a glass or stainless steel bowl,stiring and sqeesing the bag daily.
  6. Strain and bottle.
