Eggs With Chilies and Cheese

INGREDIENTS
- 10 eggs, beaten
- 1 lb grated monterey jack cheeseor grated monterey jack pepper cheese, for a spicer version
- 2 cups cottage cheese
- 1/2 cup butteror margarine, melted
- 1/2 cup flour
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- pepper, to taste
- 2 (4ounce)cans diced green chilies, drained
- 1 red bell pepper, chopped or
- 1 (2ounce)jar pimientos (optional)
DIRECTIONS
- Preheat oven to 350-degrees F.
- Grease a 9 x 13 inch pan.
- Combine first seven ingredients (eggs- pepper) in a large bowl.
- Stir in green chilies and red bell pepper (if using).
- Pour mixture into prepared pan.
- Bake for 30-40 minutes or until it is lightly browned and toothpick inserted in center comes out clean.
