Tailgate Soup

INGREDIENTS

  • 1 (15ounce)canmixed vegetables
  • 1 (15 1/2ounce)can hot chili beansor chili starter (I used Bush’s Chili Magic)
  • 1 (15ounce)can whole kernel corn
  • 2 large potatoes, washed & cubed (do not peel)
  • 1 (14 1/2ounce)can diced tomatoes
  • 1 (10 3/4ounce)cancondensed tomato soup , plus
  • 1 (10 3/4ounce)can water
  • 1 medium onion, chopped
  • 1 lb ground beefor ground turkeyor ground chicken
  • 1 tablespoon chopped garlic
  • 1 teaspoon paprika
  • 2 teaspoons olive oil
  • salt and pepper

DIRECTIONS

  1. Saute the chopped onion& garlic in the olive oil until light brown.
  2. Add ground meat to same pan& brown.
  3. Drain off any fat/oil.
  4. Add paprika& salt& pepper& cook for a minute or two to blend flavors.
  5. In crockpot or large stew pot, add meat/onion mixture& potatoes.
  6. DO NOT DRAIN THE CANS BEFORE ADDING.
  7. The juices from the cans is what really makes this soup.
  8. To same pot, add contents of all cans.
  9. Cook in crockpot on low 8-10 hours.
  10. If cooking on stove top, bring soup to a boil then reduce heat& cook on low heat 4-5 hours.
  11. Stir ocassionally.
  12. Serve topped with cheddar chesse; great with buttered biscuits.
