Copycat “Bill’s” Chocolate Banana Bread

INGREDIENTS

  • 250 g plain all-purpose flour
  • 2 teaspoons baking powder
  • 125 g unsalted butter, softened
  • 250 g caster sugar(superfine)
  • 4ripe bananas, mashed
  • 2 eggs, lightly beaten
  • 1 teaspoon vanilla extract
  • 175 g good-quality dark chocolate chips or milk chocolate chips

DIRECTIONS

  1. Preheat the oven to 180°C (350°F/Gas 4).
  2. Sift the flour and baking powder.

  6. Add the dry ingredients and stir to combine, being careful not to overmix.
  7. Pour the batter into a non-stick, or lightly greased and floured, 19 x 11 cm (71/2 x 41/2 inch) loaf tin and bake for 1 hour 15 minutes, or until the bread is cooked when tested with a skewer.
  8. Leave to cool in the tin for 5 minutes before turning out onto a wire rack to cool.
  9. Serve in thick slices with butter.
